Two identical Weber Performer kettles with two different jobs. Smoke runs indirect — coals banked to one side, food on the cool side, lid vents doing the steering. Sears runs hot and direct, full chimney, grate down low.
The split is behavioral, not physical. Same kettle, same charcoal, different judgment. A reverse-seared picanha starts on Smoke and finishes on Sears, two minutes a side at full heat.
